My favorite (admittedly in the data sheet) detail: an address pin for an accelerometer. You think you can just pick one of two addresses, but the pin’s pulled up internally, so using the low address sinks current through a 30k resistor. Gigantulous for a gadget on a 10 µA budget.

You don’t technically need a soldering iron! Everything is snap-fit except for the buzzer connector; if you can live without the beep, you can do the whole mod with a small screwdriver and tweezers (or fingernails if they’re not too short)

Those three are all confirmed compatible, yes. I don’t have any others tested, although I sense that the F-91WC should work, since it’s identical but for the colors. And it’s worth noting that the “Illuminator” F105W and A168 models are incompatible, despite their similar look.

I have a couple of watches I’ve disassembled & reassembled over 100 times. Pieces of metal get bent, but you can bend them back; the main thing is that dust and smudges add up. I tend to have one F-91W for frequent testing and one A158 for wearing that I handle with white gloves.

There’s also a secret ninth segment in position 0, just to the left of segment C, that’s missing from the segment map. It’s (0, 15) and the firmware automatically sets when displaying certain letters like B or D in that position.
